Thank you for being part of our Annual Austin Samaritans Spring Dinner. I have important information about the Spring Dinner as follows:

 We offer our guests a menu preference. Please provide us your menu preferences as soon as you have a chance (by replying to this email). All entrées are served with freshly baked bread, salad, iced tea, and dessert. The menu choices follow:

TEXAS 12 OZ RIBEYE | Served with root vegetables and expresso compound butter

CHICKEN PARMESAN | Paired with spaghetti tossed in marinara

VEGAN DINNER | Vegetable risotto stuffed portobella, char grilled broccolini, and balsamic reduction

Check In and Reception with Cash Bar open at 6:30

Dinner/Program will begin at 7:15

Cash Bar Available 6:30 – 8:00.

Cash Bar prices include tax + gratuity

Dr. Laura Parajón, AMOS Health and Hope, will join us foran evening of fellowship and engaging conversation. She will share about the work being done at Clínica Villa Guadalupe medical clinic, Clínica El Samaritano medical clinic, and Clínica El Samaritano dental clinic.

Parking

Self Parking Cost – Complimentary ($6.00 fee waived)

Please bring your parking ticket with you to the event and the reception desk will validate.

Self parking is available across the street from The UT Club in the “Manor Parking Garage”, 2017 Robert Dedman Dr, Austin, TX 78712.

Valet parking is also available - $16 per car

Valet is located on the East Side of the Darrell K. Royal – Texas Memorial Stadium, at the entrance to the UT Club.

DR. LAURA CHANCHIEN PARAJÓN, MD, MPH
AMOS Co-Founder

Dr. Laura Parajón is a family physician, former medical missionary with International Ministries, and public health leader whose career has been shaped by a call to serve. She co-founded AMOS Health and Hope with her husband, David, and spent nearly 20 years in rural Nicaragua walking alongside communities to improve maternal and child health, build community-based primary care, and train local leaders. Working in partnership with churches and community health workers, she sought to bring practical expressions of Christ’s love through healthcare, prevention, and hope.

Today, Dr. Parajón serves as Director of the Center for Health Protection at the New Mexico Department of Health, where she helps lead efforts to monitor illnesses, understand health trends, and respond when communities face health threats. She previously served in senior leadership at the Centers for Disease Control and Prevention (CDC), guiding national efforts to prevent chronic diseases such as heart disease, diabetes, and cancer.

She worked to ensure public health programs across the country were grounded in sound data, strong partnerships, and measurable results — so that efforts truly improved people’s lives. She has also served as the Deputy Cabinet Secretary and State Health Officer for New Mexico and as Associate Professor in the Department of Family and Community Medicine at the University of New Mexico.

Dr. Parajón earned her medical and public health degrees from the University of New Mexico and is board certified in Family Medicine. 

AMOS Health and Hope reduces health inequities throughout Nicaragua by empowering local leadership to prevent disease and save lives. AMOS is dedicated to reducing preventable deaths and improving the health and well-being of people who suffer from the unjust conditions of extreme poverty. 

Austin Samaritans is the primary financial supporter of two AMOS programs, Clínica Villa Guadalupe (CVG) and El Samaritano Dental Program. Without the support of Austin Samaritans, the clinics would close. Austin Samaritans also provides support to Clínica El Samaritano, which is operated by AMOS.
